The Gold Coast has no shortage of tabletop grills, but the locals who fill this Southport strip come for the meat itself. An in-house butcher breaks down the cuts each day, and the board leans hard into the top of the beef spectrum: A5 wagyu chuck tail, cube roll, chuck slice, marbled and portioned for the charcoal that glows in the centre of each table. You grill your own, turning short ribs and pork belly over the coals while the smoke climbs and a spread of banchan crowds the table edges. The marinated short rib that gives the room its name is the anchor, but the pleasure here is as much ritual as flavour, the slow accumulation of a shared meal built one seared slice at a time. It runs Tuesday through Sunday, well into the night, and books out on weekends and through the busier weeknights. The setting is unfussy and modern rather than designed, the focus kept squarely on the coals and the quality of what lands on them. For a coast better known for its beaches than its grills, it has become a dependable fixture.
