A Fairtrade-licensed micro-roastery run by the Shadbolt family, where beans are roasted in small batches on a Diedrich roaster set up in the same room as the cafe counter. Mark Shadbolt trained as a food technologist and Andrew as a chef, his CV including time in the kitchen at Melbourne's Rockpool, and the pair have concentrated the operation on single-origin coffees roasted to profiles chosen for each lot. Beans are sourced from Fairtrade and Rainforest Alliance certified growers. The Maude Street premises works as both roastery and cafe: alongside the espresso and retail bags there are light meals, pasties and sweet things, with roasting happening in view of the tables. More than a decade in, it remains a genuinely local specialty-coffee operation rather than a franchise outpost, supplying wholesale beans across the Goulburn Valley.
