Former wine science professor Brian Freeman planted Australia's only Rondinella and Corvina vines at 560 metres in the Hilltops region in 1999, on soils of decomposed speckled-dog granite layered with red wind-blown silt from central Australia. The focus is Italian varieties — nebbiolo, sangiovese, prosecco alongside those two rarities. Tastings by appointment.
