Shane McLaughlin dug the original fermentation cellar by hand after moving to Bilpin in 2007. He blends Australian table apples with heritage cider varieties using techniques drawn from Normandy, Hereford and Somerset — and exclusively uses the Julie™ apple, a chance seedling discovered at the neighbouring orchard and the first new commercial apple found in the Sydney region in a century.
