Billy Wu left a career in accounting in 2010 for the liquor trade, working through Blackburn Fine Wine before becoming a regular at this Whitehorse Road bottle shop and eventually taking it over from the previous owner. Since then he has sharpened its focus: trimming back wine and spirits to grow the craft beer wall from around 500 labels to nearly 1,100, with 30 to 50 new, non-repeating beers landing most weeks. The shop opened in 2016 to give Melbourne's outer-eastern suburbs — well past Box Hill and Burwood — the kind of specialist range usually reserved for inner-city bottleshops. Staff will track down harder-to-find bottles on request for customers building a specific order. It draws from craft breweries across Australia and overseas rather than the major distributors, and the constant rotation means regulars rarely find the same six-pack twice. Open seven days, with late trading Thursday through Saturday for after-work stops on the way home.
