Ioannis Kasidokostas grew up in Athens and cooked in its restaurants before opening Sowl in Carnegie with his wife, Maria Tsilfoglou. Aegli, in a heritage-listed terrace on Coventry Street and named for a minor Greek goddess of radiance, is the more ambitious room. The cooking draws on regional Greece, the dishes rarely seen on Melbourne menus. The wine list leans on Greek producers and indigenous grapes that seldom reach Australia.
