The croissant takes three days. Everything else in the cabinet is made through the day in small batches — choux bombs, eclairs, cruffins filled with Nutella or cinnamon, almond croissants baked twice. Brunch runs from 6am on Single O coffee, seven days, closed only on Christmas Day. Pastries can be ordered a day ahead, which tells you how the mornings go.
