The Italiano family has made pasta on Nicholson Street since 1985, and has been feeding Melbourne for longer: grandfather Natale founded the Perfect Cheese Company in 1930. Cousins Paul, Nat and Maria now run the factory and shop, rolling and laminating pasta the traditional way five days a week and cutting it to order at the counter. The jumbo agnolotti are shaped by hand, and the same pasta goes out wholesale to Melbourne restaurants.
