Sydney Seafood School has run inside Sydney Fish Market since 1989 and now sits on the mezzanine of the new market building on Blackwattle Bay. Classes open with a demonstration in a tiered auditorium, then move to benches of six, where you cook the dishes yourself and sit down to eat them, alongside a roster of visiting chefs. The market behind it is owned by the NSW seafood industry, catchers and merchants in equal parts.
