Matt Steele sold his first cheese shop in Canterbury, found he missed the work, and was priced out of Brunswick shopfronts, so Cornelius began in a warehouse on Syme Street, delivering cheese and running a cheese club. The warehouse now opens as a shop several days a week, with cheese cut to order from the cave, including some sold nowhere else in the city.
