Kazu

모닝턴 반도, VIC

Down a laneway off Main Street, this small Japanese room has kept the same quiet purpose since 2001, an unusual run of longevity in a beach town where kitchens turn over with the seasons. The chef is Japanese and the approach is traditional, which on the Mornington Peninsula means resisting the pull toward fusion and novelty in favour of clean technique. The counter turns out sashimi cut with care, the fish handled simply enough that its freshness has nowhere to hide, and the sushi-and-sashimi boat for two remains the order regulars steer newcomers toward. Around it sit the familiar anchors of a neighbourhood Japanese kitchen, teriyaki and grilled dishes among them, priced for a weeknight rather than an occasion. The setting is unpretentious, a narrow space that trades on consistency rather than design, the sort of place locals fold into their routines and visitors stumble upon with relief. In a stretch of coast better known for its wineries and its cafes, it has quietly held its ground for over two decades, doing one thing steadily and well. There is no ambition here beyond doing the food properly, which turns out to be ambition enough.
