Ian Peterson started making sparkling wine for a specific reason: to mark each grandchild's birth. Finding no commercial small-batch producers in NSW, he crossed into South Australia to get it done. That origin story now underpins a Pokolbin cellar door specialising exclusively in sparkling wine — over 30 varieties, all traditional method. In the Hunter Valley, where still shiraz dominates, that single-minded focus on bubbles is genuinely unusual.
