What began in a garage in 2021 now roasts, bags and ships from an industrial-modern room on Boolarra Avenue, a short step from Moe. The counter sits in front of the roaster itself, so a morning flat white comes with a clear view of green beans being brought to colour, packed and cupped for quality, the whole production line on display five mornings a week. Beans supply cafes across Gippsland alongside a growing mail-order trade, but the Newborough HQ is where the operation is most legible, open weekdays through to midday. In a coalfield town not otherwise on the specialty-coffee map, it makes the case that serious roasting belongs in the Valley, not only in Melbourne's inner north.
