In February 2010 a group of friends sat with beers in a vacant mortgage brokerage in one of Brisbane's oldest working-class buildings and asked what the room could become. Eighteen months of rejection, unbudgeted cost and Heritage Council supervision followed; Malt opened in May 2011, in the shadow of the floods that had just gone through the inner suburbs. It runs over three floors — an Attic restaurant under the original rafters, a whisky bar at street level, and a cellar of back-vintage wine reached by a staircase behind the bar.
