Lewis and Helen Nguyen moved to Albury in 2018 and opened Sen in the old Bistro Selle rooms on Olive Street, their third business in the town. Head chef Ninh Tran cooks across the regions of Vietnam using local produce, Murray cod and beef cheek and pork jowl, worked with Vietnamese mint, lemongrass, kaffir lime and dill. The pho broth runs eight hours. Sauces are made in house.
