Natalie Smith and Ben Taylor have distilled from a converted shed on their Moonah property since 2017, working entirely by hand with a copper pot still and direct firing. The gin's botanicals include huon pine needles, sage from the distillery garden, and abalone shell they collect on family dives, with water drawn from Mount Field snowmelt. The range runs from gin and a kunzea honey gin to single malt whisky and moonshine.
