Becky Khanthavongsa opened Zaab on Lonsdale Street in 2016 with her father in the kitchen and her brother on the bar. Her parents came from Laos, and the menu runs to tum maak hoong, the green papaya salad with crab paste and fish sauce that she did not expect Canberra to order. The name means delicious in Lao and intense in Thai. Cocktails are matched to dishes rather than wine.
