Joanne Mamone and Rob Burness left careers as a wine educator and a sommelier to open this Windsor bottle shop in 2007, building a list around wines they found genuinely interesting rather than what moves fastest off a shelf. A Coravin system lets customers taste before they commit, pouring from opened bottles without spoiling what's left, and the range has grown to include imported craft beer and cider as that market has grown. The pair later added a second outlet at Prahran Market, in 2016, extending their reach beyond the Chapel Street strip. It functions as much as a tasting room as a shop, with a sit-down component for working through a glass on site. Open seven days, from 9am, with extended hours Thursday and Friday evenings.
