The phở at Quán 55 is made in the same stock pot Wynn's mother-in-law used in her own restaurant more than twenty years ago. Wynn runs the floor in Chirn Park and serves the food she cooks at home, and the menu follows Vietnam's own borrowings, from French pork terrine to Chinese sizzling plates. Sugar cane from Jacobs Well is pressed daily and shaken with lime and kumquat. Quán means bar, and there's a real one.
