Four generations of Cofields have worked Rutherglen's vineyards since 1909. Today Damien runs the winery his father Max founded in 1990, with senior winemaker Peter Birks — trained in Montpellier, seasoned across Portugal and four years at La Spinetta in Piedmont — shaping a range that anchors itself in Method Traditionelle sparkling alongside regional whites, reds, and fortifieds. The restaurant, Quartz Cuisine, sits alongside.
