The secret, Sanguine will tell you, is the soil — Cambrian earth laid down 510 million years ago. The Hunter family grow Shiraz and other varieties on this ancient ground, with a winemaking heritage that reaches back to the 1860s. The cellar door is open Wednesday to Sunday.
