Planted in the mid-nineties with guidance from Bass Phillip's Phillip Jones, this Fish Creek vineyard sits at mainland Australia's southern tip, where volcanic soils and Bass Strait winds shape its Pinot Noir and Chardonnay. Viticulturist Georgia Roberts forgoes irrigation entirely, tending each vine by hand. The cellar door also pours a Pinot Noir-infused gin, different with every harvest.
