Adamas Forge works out of Bennetts Green on the shore of Lake Macquarie, hand-forging kitchen knives — gyuto, kiritsuke and sujihiki among them — in Damascus, san mai and Aogami Super steel. The making is old-fashioned in the best sense: steel heated and hammered to shape rather than ground from bar stock. Custom orders begin with a design consultation, and the forge also teaches, running one-day blacksmithing and two-day bladesmithing courses alongside knife-sharpening instruction for those who want to keep an edge.
