Joel Humphreys cooked at St John, Rockpool and Bistro Moncur before opening Bistro Penny with long-time collaborator Nic Wong in a former bank on Bolton Street. French bistro cooking comes off a three-metre grill in the open kitchen, and the menu is rebuilt daily around what's been caught and picked. The restoration uncovered heritage brick, sandstone and beams first imported for the Harbour Bridge. It earned a Good Food Guide hat within three months of opening.
