Thomas Deliopoulos cooked sixteen years in NATO officers' clubs before he and Sylvia Gabriel moved to Melbourne and worked out what Oakleigh was missing. Every other shop does lamb; they do pork. Only female pigs, which they say run milder, off the skewer with oregano, lemon, paprika and a firm hand on the salt. Everything is made in the shop.
