Marlon and Joel Dubs still hand-roast daily on a cast-iron Vittoria drum roaster, adjusting by eye and nose rather than algorithm. Fifty-plus coffees, a hundred-odd loose-leaf teas under their own Carlisle Tea label, and nothing warehoused — what you order goes in the roaster that day.
