The fish comes off their own boats, Diana and Selkie. George and Jill Mure started the business fifty years ago and the family still runs it, on Victoria Dock in Hobart's working port with their own fishmonger downstairs. The wine list takes in Tasmanian bottles and international ones chosen for a maritime history, which is a stranger and better idea than most lists manage.
