Chefs Francis Dela Cruz, Aileen Aguirre and Lesley Roque are long-time friends, and they reworked their tiny Darlinghurst diner with Ralph Libo-On and Michael Mabuti of Melbourne's Askal. The result is one of Sydney's more ambitious Filipino menus, working native Australian ingredients into traditional recipes, with a hibachi going over coals. The cocktails draw on Philippine history too, with lambanog, a Filipino distilled spirit, turning up in the glass.
