Thomas and Vince opened Frenchies in 2017 inside The Cannery, a repurposed industrial precinct in Rosebery. The kitchen turns out aged charcuterie, hand-rolled pasta and long-fermented sourdough; brewer Vince designs the drinks list—beers, spritzes, aperitivo cocktails—to pair with the food rather than stand apart from it. A bakery followed in 2023. French instincts, Sydney ingredients, no pretension.
