Sisters Sam and Chris Jones run this Cambridge distillery with a travel-informed instinct — spirits drawn from where they've been, made for where they've landed. The Coffee Liqueur, built on beans from local roaster Tasman Coffee, leads with espresso and finishes on cacao. Single malt whisky, festive gins and liqueurs round out a range that earns its breadth.

The name comes from the High Court ruling that changed Australian political history — a fitting origin for a distillery that does things its own way. From 4 Lamb Place in Cambridge, Andrew Patten, Raj Charan Singh and Stephen Parry produce three gins (Hobart Dry, Lemon Myrtle, Masala) and a Preamble Series whisky aged in American and French oak. Small batches, no shortcuts.

Three times named the world's best whisky — in 2014, 2018 and 2019 — this Hobart distillery makes single malt, single cask expressions where no two batches are identical. The slow, sensory-led process is the point: each cask is monitored until it peaks, then bottled. The result put Tasmania on the global whisky map and kept it there.
