네덜란드 태생, 캐나다 육성의 테우니스 콰크는 1977년 이곳에 첫 포도나무를 심었으며, 그 전에는 와이너리를 직접 짓기 위해 부지에서 사암을 채굴한 지 오래였다. 재활용 목재, 웨일스 슬레이트(선박 밸러스트), 수감자 채굴 그래피언즈 돌(의회 의사당의 동일한 출처)이 건물에 특별한 무게감을 준다. 포도주는 바위가 많은 저수율 경사면에서 자체 생산된다. 토요일만 운영, 겨울엔 모닥불을 피운다.
