Zander Thompson was a lawyer before he was a brewer, and Number Juan — the mexi-corn lager that outsells everything else here — began as a home brew for his wife Carmen, who is Mexican. He nearly left it off the opening list. The Westerns-and-Mexico fit-out is theirs too. Beers run unfiltered and unpasteurised in 700-litre batches, from Kölsch to fruit sours. When they opened in 2019, Baw Baw Shire hadn't had a brewery since the 1880s.
