On Edward Street in the CBD, Brisbane Gin School has run Thursday-to-Sunday distilling classes since 2019 — over 30,000 visitors in. Guests work a copper still, choose from 180 botanicals (40 of them Australian native), and leave with a 700ml bottle of their own recipe. A rum equivalent covers fermentation, barrel aging, and spice blending in groups of 14.
