Brook Turner is a bladesmith and woodworker on Sydney's Northern Beaches, a radiographer by day who makes knives the rest of the time. His work centres on the gyuto, its semi-flat belly cut for push-cutting and rocking alike, forged across a range of steels and constructions, including 52100 high-carbon. He fits each blade with a one-off handle in premium timbers gathered from around the world, and has collaborated with Japanese maker Ohishi on Tasmanian-blackwood and burl-handled chef knives. Regarded among Australia's most respected custom makers, his books run years deep.
