The sandstone walls of this Rocks corner have housed a pub since 1841 — one of Sydney’s oldest continually licensed hotels — and a working brewery since 1986, the city’s oldest. Beer is still brewed on-site and poured in the bar downstairs, the kitchen keeps the convict-quarried rooms busy, and nine snug boutique rooms sit up above. Little about the setup has changed, and that’s the point.
