On Imlay Street in the whaling town of Eden, a meticulously restored 1904 building reopened as the Sapphire Coast's grande dame after decades. Pressed-metal ceilings and period detail run through eight named rooms, some looking to the ocean, others to the ranges or out toward the winter whales.
