On Tasmania's Channel coast at Kettering, Hunnington makes spirits under the Deadman's Point label — vapour-infused gin, fresh chilli vodka, real coffee bean vodka, and triple-distilled single malt whisky aged in sherry, apera, and bourbon casks. Cask HD015 has been maturing for over six years. Small releases, individually numbered casks, and the kind of whisky program that rewards patience.
