Belgrave's family-run distillery makes the case that Australian rum has been missing something specific: hogo. Using wild fermentation, Killik produces high-ester rums in the Jamaican tradition — fruity, funky, built for Daiquiris or drinking straight. The distillery door opens Wednesday to Sunday, with a bar and café on site at 64–68 Monbulk Road.
