Davy O'Rourke spent ten years in kitchens, some of it with Tetsuya Wakuda in Sydney, before following his parents to Cairns. His mother is from Papua New Guinea and grew up making things to sell at market, so the two of them started a cake stall at Rusty's. The café came out of that. It is named for her, and for the coconut in the brownies.
