Beans are roasted locally under the Merchant Coffee Roasters label, a separate roastery on the Mt Buller Road, and appear across a rotating line of blends and single origins sold by the cup, by subscription and wholesale to other cafes. The kitchen leans on the surrounding High Country, with house-made sourdough and light breakfasts and lunches built from regional produce, and a sister tea label, Mad Hatter, rounds out the counter. Early opening hours suit skiers and cyclists heading for the mountain, and the room has become a reliable morning fixture for a town that sees heavy seasonal traffic. Ethical sourcing and direct relationships with growers are part of the pitch, but the draw is simpler: consistent, carefully roasted coffee in a place that had little of it a decade ago.
