Montrachet has been Brisbane's French fine dining standard-bearer for over two decades, surviving moves from Paddington to Bowen Hills and multiple chef transitions. The current chapter belongs to Michelin-trained Clément Chauvin — who also runs Canberra's Les Bistronomes — and front-of-house director Remon Van de Kerkhof, whose résumé spans Rockpool, Aria, and two- and three-star houses in the Netherlands. The seasonal menu leans classical French; the wine list holds three glasses from the Australian Wine List of the Year Awards.
