James Milne makes ergonomic chef's knives on the Gold Coast, fitting each to the owner's hand and grip to ease arthritis and repetitive-strain pain. Much of the steel is high-carbon offcut, the handles are worked from reclaimed material, and older knives are re-ground and re-handled rather than discarded. He also forges lightweight belt and field knives, and offers a lifetime warranty with free sharpening, sharing finished work on an active Instagram.
