Matt and Dave spent three years — and considerable jet-lag — developing their gin before launching Patient Wolf in Melbourne's Southbank. The centrepiece is a 220-litre Müller copper still, custom-built in Germany over twelve months, designed to maximise copper contact for a cleaner distillate. The result is a serious small-batch operation that treats gin's 17th-century roots as a starting point, not a ceiling.
