FREMANTLE & SWAN VALLEY, WA

One of the oldest producing vineyards in Western Australia, on the gravelly loam of the Darling Scarp foothills at Baskerville. Peter Hoffman bought the block in 1986 and made the first wine in 1999; his son Paul came home from the Loire in 2010 set on working naturally, and now makes zero- and low-addition wines, fermented on the vineyard's own wild yeast in concrete vats built in the 1970s. Old bush vines and unusual varieties — Aleatico, Malvasia, Vermentino, Chenin — bottled only once they settle. The winery shares its name with the Swan Valley sub-region itself.
