A family of Chinese immigrants who had lived in Vietnam opened Tan Viet in Cabramatta in 1993. They say they were the first to drop the whole fried bird in favour of just the maryland, the most succulent cut, and the chicken still comes fried golden and paper-thin over juicy meat. The menu is kept deliberately small. Get it with egg noodles, and use the fluoro-red chilli sauce.
