Tony Percuoco, a Naples native, has run Tartufo (Italian for truffle) in the Emporium complex at Fortitude Valley since 2010, his only Brisbane room. Black-and-white photographs of his family line the walls and a 1968 Vespa sits in the foyer. The kitchen makes its own pasta and bread and ranges across Naples, Tuscany, Umbria and Abruzzo, with wood-fired Neapolitan pizza certified by the AVPN (member #595) added a few years in.
