Mara Ripani and partner Ralf run this 15-acre permaculture farm on Dja Dja Wurrung land outside Daylesford, building straw-and-clay passive solar structures by hand. The model draws on a stay at a Tuscan farm — bread, quince paste, communal cooking — and recreates it here: kitchen garden, orchard, wetlands, pigs, geese, and a cooking school focused on growing and preserving your own harvest.
