Nabin Gurung arrived in Australia from a Bhutanese refugee camp, came up through this kitchen as an apprentice, and in 2022 bought Black Cow with two long-serving colleagues. It sits in a 1930s art deco former butcher's shop on George Street, and the room still does what the building always did: aged, grass-fed Tasmanian beef, here with a wine list built around Tasmania.
