The pizza dough is proofed for 72 hours, then cooked at 450 degrees Celsius for 90 seconds, producing a crisp, lightly charred crust with a soft interior. The menu runs from entrées through pasta and gnocchi to Italian desserts, with craft beers, wine, spirits and cocktails, and BYO available for wine. Recycled wood and Edison bulb lighting fill out the modern, rustic room. Set menus can be arranged for large groups. Open evenings only.
