At Dignams Creek on the far south coast of New South Wales, Iain Hamilton forges knives entirely by hand — kitchen blades and cleavers, hunting and utility knives, axes and tomahawks, and Damascus work drawn out at the anvil. Everything is made on site from high-carbon steel. The forge has featured across seasons of River Cottage Australia and made knives for Paul West and Hugh Fearnley-Whittingstall. Blacksmithing and knife-making courses run by appointment for those who want to learn the craft at the fire.
